Butterhead lettuce – the uncrowned queen of freshness 🥬
Everyone may be familiar with lettuce, but few people know what a noble past it has. Its scientific name is Lactuca sativa, and it was consumed in ancient Egypt 4000 years ago – in fact, it was considered more of an aphrodisiac than a salad. The name comes from the Latin word ‘lac’ (milk), which refers to the white, milky sap of the plant. In Hungarian it is called lettuce or simply salad, but it is sometimes called romaine lettuce, although it is actually a different type.

Butterhead lettuce is not the strongest-tasting vegetable, but its freshness, crunchiness and versatility make it an indispensable part of the kitchen. In Hungarian households, it is a must-have for summer Sunday lunches and light dinners. A salad bowl is not complete without it, but just think of the leaves tucked into burgers or sandwiches: there it is, quietly but all the more important!
Which part is edible?
The edible part of the plant is the leaf, which forms a tightly arranged head. The outer leaves are thicker, while the inner leaves are softer and lighter in colour – usually the ones we like best. The stem (the stalk) is also edible, although it is used less often. However, the root is not edible and should never be processed! It is important to note that lettuce that is too old can become bitter and less enjoyable.

Butterhead lettuce is a true lightweight champion: almost zero calories, but rich in fibre, water and vitamins. You’ll find:

Production, season and economic background
Butterhead lettuce is a true seasonal favourite: in Hungary, it is most commonly found in spring and early summer, and is in season from April to June. In our country it is mainly grown outdoors, but in milder winters it can also be grown in a greenhouse. In Europe, Spain, Italy and France are the largest producers. In Hungarian shops you will mainly find home-grown lettuce in spring, but in winter it is often imported, mainly from southern Europe.
How to choose a good butterhead lettuce salad?
Choosing the right lettuce is not a difficult task, but there are a few tricks:
- The head should be firm, but not too hard
- The leaves should be fresh, bright green, not wilted
- Avoid brownish spots, yellowish edges
- Smell fresh, “green” – spoilage has a slightly sour smell
Extra tip: if the cut surface on the stalk is fresh and white, it has probably been harvested recently.
Storage tips
Butterhead lettuce is best stored in the refrigerator, preferably in a sealed bag or box, so that it does not lose moisture quickly. It’s best to add paper towels to absorb moisture and keep fresh for longer. It should be stored for a maximum of 3-4 days – after that it will start to wilt and lose its flavour.
International salad tour 🌍
They love it all over the world! In France it is served with vinaigrette dressing, in Italy it is drizzled with olive oil and balsamic vinegar. A favourite in American kitchens is the wedge salad or classic Caesar salad, but you’ll also find it in Eastern cuisines – served with Vietnamese spring rolls, for example.
A classic recipe: vinegar and sugar lettuce salad
It is a regular at the Hungarian family table.
Ingredients:
- 1 head lettuce
- 1 tablespoon vinegar
- 1 teaspoon of sugar
- pinch of salt
- Water
Tear the cleaned leaves into larger pieces and pour the vinegar-sugar-salted juice over them. Best chilled – delicious with stews or stews!
Kitchen tips, tricks, spices
Lettuce does not tolerate long cooking or heat – so it is mainly used raw. It is excellent in salads, sandwiches and cold bowls. Pair it with lemon juice, wine vinegar, honey, olive oil and maybe a pinch of garlic. Goes well with the following spices:

- Parsley
- Basil
Which certainly doesn’t fit? Strong, characterful spices such as rosemary or marjoram – they would be too harsh for this soft flavour.
